Pear Puff Pastry with Nutella®

Williams Pears (for garnish) 10 slices

Instructions

  1. Prepare the Dried Pears (Optional Decoration)
    Start by preparing the dried pears, which will require a long cooking time. Slice the pear into thin slices and lay them on a baking tray lined with parchment paper. Sprinkle a generous amount of powdered sugar (2-3 tablespoons) over the pear slices.
    Bake in a preheated oven at 60°C (140°F) for about 3 hours, ensuring the pears dry out slowly and evenly. Once done, remove them from the oven and let them cool.

  2. Prepare the Puff Pastry
    Lay the puff pastry on a baking tray lined with parchment paper. Use a fork to prick the entire surface of the pastry to prevent it from puffing up too much during baking.
    In a small bowl, mix the powdered sugar and cornstarch together. Sift this mixture over the pastry to evenly coat it before baking.

  3. Bake the Puff Pastry
    Preheat the oven to 210°C (410°F) in static mode. Bake the pastry for 18-20 minutes, or until it turns a beautiful golden brown. Once done, remove the pastry from the oven and allow it to cool slightly.

  4. Prepare the Pear Syrup
    While the pastry cools, prepare the pear syrup by bringing water and granulated sugar to a boil. Once boiling, remove from heat and add the pear slices, allowing them to soak in the syrup. Transfer the pears to a small bowl and set aside.

  5. Assemble the Pastries
    After the puff pastry has cooled, use a sharp knife to trim the edges and cut the pastry into 5 equal pieces. Remove the core from the pear slices and cut them into pieces approximately 5 mm thick.
    Now, it’s time to assemble the pastries. For each serving, take a piece of puff pastry and, using a pastry bag fitted with a 6mm round tip, pipe approximately 7g of Nutella® on top of the pastry.
    Add a couple of the semi-caramellized pear slices over the Nutella®.

  6. Layer the Pastries
    Take another piece of puff pastry and repeat the same process, piping Nutella® and adding the pear slices. Place this second piece of pastry on top of the first one.

  7. Add the Final Touches
    For the third layer, lightly dust the top with powdered sugar. To create a striking, bicolor effect, cover half of the top layer with a scraper or a piece of parchment paper, placing it diagonally across the pastry before dusting it with powdered sugar.
    Finally, garnish each pastry with a couple of the dried pear slices you prepared earlier.

  8. Serve and Enjoy
