Nutella® Poke Cake

This Nutella® poke cake is a perfect treat for any occasion, offering a deliciously rich combination of a soft, moist cake with a creamy Nutella® filling. With the addition of fresh red currants, this cake not only delivers on flavor but also adds a beautiful burst of color. Ingredients:

Brown sugar 180g
Eggs 110g
Fine salt 1 pinch
Natural plain yogurt 125g
Butter (unsalted) 100g
Red currants 90g
Baking powder 8g
Nutella® 150g
Red currants (for decoration) to taste
Decorative sugar (for topping) to taste

Instructions:

  1. Prepare the cake base: Begin by melting the butter on low heat. Once it has melted, set it aside to cool slightly.

  2. Mix the wet ingredients: In a large bowl, combine the brown sugar and eggs at room temperature. Add a pinch of fine salt and whisk together until the mixture becomes light and smooth. Then, pour in the melted butter and whisk until it is fully incorporated.

  3. Add yogurt: Next, add the natural plain yogurt to the mixture and continue to whisk until you have a uniform batter.

  4. Incorporate dry ingredients: Sift the all-purpose flour and baking powder together to ensure there are no lumps. Gradually add the sifted dry ingredients to the wet mixture, mixing on low speed to avoid any flour flying out. Continue mixing until everything is well combined.

  5. Add red currants: Gently fold in the red currants, reserving a small portion for decorating the cake later.

  6. Prepare the pan: Grease and line a 30×22 cm baking pan with parchment paper. Pour the batter into the pan, spreading it evenly with a spatula. Sprinkle the remaining red currants over the top of the batter.

  7. Bake the cake: Preheat the oven to 180°C (350°F) and bake the cake in a static oven for approximately 30 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool and shape the cake: Once the cake is baked, remove it from the oven and let it cool in the pan. After cooling, transfer it to a cutting board and trim the edges to make the cake neat. Cut the cake into 5 horizontal strips and 6 vertical strips, resulting in 30 equal-sized cubes.

  9. Create the poke effect: Using the handle of a wooden spoon or a similar utensil, gently press into the center of each cake cube to create a small hole.

  10. Fill with Nutella®: Transfer the Nutella® into a piping bag, and fill each hole with Nutella® to create a little dollop at the center of each cake cube.

  11. Decorate: Sprinkle the top of each filled cake cube with a little powdered sugar and decorate with fresh red currants. Arrange the cubes into the shape of a Christmas tree if desired, and serve the remaining cubes on the side.
