Instructions

Step 1: Prepare the Coffee

Start by brewing the coffee. Make 250g of coffee using a moka pot or espresso machine. Set it aside and allow it to cool to room temperature.

Step 2: Create the Syrup for the Egg Yolks

In a saucepan with a heavy bottom, combine 65g of sugar (taken from the total amount) and 40g of water. Heat over medium heat until the mixture reaches about 115°C (240°F). While the syrup is heating, place the egg yolks and the remaining sugar in a large mixing bowl.

Step 3: Pasteurize the Egg Yolks

Once the syrup reaches the desired temperature of 121°C (250°F), begin slowly pouring the syrup into the egg yolk mixture in a thin stream. Use a hand mixer to start whisking the yolks on low speed. Increase the speed slightly as the syrup is incorporated, and continue whisking until the mixture is thick, pale, and fully cooled. This will take several minutes.

Step 4: Incorporate the Mascarpone

Once the egg yolk mixture is fully chilled and has reached a fluffy consistency, it’s time to add the mascarpone cheese. Gradually add the mascarpone, one or two tablespoons at a time, continuing to whisk at a low speed to ensure the cheese blends smoothly into the egg mixture.

Step 5: Assemble the Tiramisu

By now, the coffee should be cool enough to use. In a 24×24 cm (9×9 inches) square baking dish, begin layering the tiramisu. Quickly dip the ladyfingers in the cooled coffee, ensuring that they are soaked but not soggy. Lay them down to form the first layer of your tiramisu.

Step 6: Add the Nutella and Mascarpone Cream

Once the ladyfingers are in place, spread half of the Nutella evenly on top, followed by half of the mascarpone cream. Smooth the cream into an even layer using a spatula.

Step 7: Repeat the Layers

Repeat the process for the second layer: dip more ladyfingers in the coffee, then layer them over the mascarpone cream. Top with the remaining Nutella and finish with the rest of the mascarpone mixture.

Step 8: Final Touches

Once all layers are completed, sift a light layer of unsweetened cocoa powder on top for a rich, finishing touch. Optionally, sprinkle some crushed hazelnuts for extra flavor and texture.

Step 9: Chill and Serve
