Ingredients

  • 1 1/3 cups all-purpose flour

Instructions

  1. Prepare Muffin Pan:

    • Lightly grease 12 muffin cups or line them with baking cups. Optionally, dust them with a little oat bran for added texture.
  2. Preheat Oven:

    • Preheat your oven to 425°F (220°C).
  3. Mix Dry Ingredients:

    • In a large bowl, combine the all-purpose flour, old fashioned oats, oat bran, brown sugar, baking powder, and ground cinnamon. Mix well to ensure even distribution of ingredients.
  4. Prepare Wet Ingredients:

    • In a separate bowl, whisk together the egg whites, vegetable oil, and skim milk until well combined.
  5. Combine Ingredients:

    • Pour the wet ingredients into the bowl of dry ingredients. Stir gently with a wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.
  6. Add Blueberries:
