Ingredients
- 1 1/3 cups all-purpose flour
- 1/2 cup old fashioned oats
- 1/2 cup oat bran
- 1/3 cup brown sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 cup skim milk
- 2 egg whites
- 3 tbsp vegetable oil
- 1 cup blueberries (fresh or frozen)
Instructions
-
Prepare Muffin Pan:
- Lightly grease 12 muffin cups or line them with baking cups. Optionally, dust them with a little oat bran for added texture.
-
Preheat Oven:
- Preheat your oven to 425°F (220°C).
-
Mix Dry Ingredients:
- In a large bowl, combine the all-purpose flour, old fashioned oats, oat bran, brown sugar, baking powder, and ground cinnamon. Mix well to ensure even distribution of ingredients.
-
Prepare Wet Ingredients:
- In a separate bowl, whisk together the egg whites, vegetable oil, and skim milk until well combined.
-
Combine Ingredients:
- Pour the wet ingredients into the bowl of dry ingredients. Stir gently with a wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.
-
Add Blueberries:
- Gently fold in the blueberries into the batter. Be careful not to break the berries, as they add bursts of flavor to the muffins.
-
Fill Muffin Cups:
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
-
Bake:
- Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the muffins are lightly browned on top and a toothpick inserted into the center comes out clean.
-
Cool and Serve:
- Remove the muffins from the oven and allow them to cool in the pan for a few minutes. Then, transfer them to a wire rack to cool completely or serve them warm.
Notes
- These Blueberry Muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days. They can also be frozen for longer storage.
- Feel free to customize by adding nuts or a sprinkle of oats on top before baking for added crunch and texture.
Enjoy these wholesome and flavorful Blueberry Muffins as a perfect addition to your breakfast or as a delightful snack any time of the day!
