Overview:

These Banana, Raisin, and Oatmeal Pancakes are a delightful addition to any breakfast or brunch spread. They are perfectly complemented by a variety of toppings such as maple syrup, honey, marmalade, or even a dollop of cottage cheese. Inspired by a recipe from Bon Appetit, these pancakes are quick to prepare and sure to please both kids and adults alike.

  • Preparation Time: 15 minutes
  • Cooking Time: 5 minutes per pancake
  • Total Time: 20 minutes
  • Serves: Makes about 10 pancakes

Ingredients:

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/4 cup golden brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 3/4 cup plain yogurt
  • 3/4 cup milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1 cup raisins
  • 1/4 cup unsalted butter, melted, plus extra for cooking

Instructions:

  1. Prepare Dry Ingredients:
In a medium bowl, whisk together the old-fashioned oats, all-purpose flour, golden brown sugar, baking powder, baking soda, and ground cinnamon. Set aside.

  2. Prepare Wet Ingredients:
In another medium bowl, whisk together the plain yogurt, milk, eggs, and vanilla extract until well blended.

  3. Combine Ingredients:
Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay.

  4. Add Banana and Raisins:
Gently fold in the mashed bananas, raisins, and 1/4 cup of melted unsalted butter until evenly distributed throughout the batter.

  5. Preheat Griddle:
Brush a nonstick griddle or skillet with melted butter and heat over medium heat until hot.

  6. Cook the Pancakes:
Pour about 1/3 cup of batter for each pancake onto the preheated griddle. Cook until bubbles form on the top of the pancakes and the bottoms are golden brown, about 2 minutes.

  7. Flip and Finish Cooking:
Carefully flip the pancakes and cook until the second side is golden brown, about 2 more minutes.

  8. Serve:
Transfer the cooked pancakes to a plate and keep warm. Repeat with the remaining batter, brushing the griddle with more melted butter as needed.

  9. Enjoy:
Serve the Banana, Raisin, and Oatmeal Pancakes warm, topped with your favorite toppings such as maple syrup, honey, or a spread of cottage cheese.

These pancakes are not only delicious but also packed with wholesome ingredients like oats, bananas, and raisins, making them a nutritious choice for a hearty breakfast or brunch. Perfectly fluffy and flavorful, they’re sure to become a family favorite!
