Olive Flakes with Green Chicken Salad

Ingredients

Chicken breast 300g
White onions 1
Carrot 1
Bay leaves 2
Cloves 3
Coarse salt To taste
Parsley 20g
Basil 15 leaves
Green olives 10g
Capers 10g
Garlic 2 cloves
Extra virgin olive oil 3 tbsp
Fine salt To taste
Lemon juice 1 tbsp

Instructions

To prepare the Olive Flakes with Green Chicken Salad, begin by filling a pot with cold water. Add the peeled and halved carrot, peeled and halved onion, bay leaves, and cloves. Bring the water to a boil.

Once the water is boiling, add the whole chicken breast and a generous amount of coarse salt. Let it cook for about 20 minutes.

Once the chicken is cooked, remove it from the pot and let it cool on a cutting board. In the meantime, prepare the green sauce.

Chop the cooled chicken breast into small cubes and place it into a bowl. Add finely chopped parsley, basil, green olives, capers, garlic, olive oil, fine salt, and a splash of lemon juice. Mix everything well to combine and create a delicious green dressing for the chicken.

To assemble, place a spoonful of the green chicken salad on each olive flakes. Serve and enjoy!
