Olive Skewers with Cold Cuts and Cheese

Ingredients:

La Bottega di Olivia&Marino 10 pieces
Songino (lamb’s lettuce) 10g
Salami 1 slice
Speck (smoked ham) 1 slice
Prosciutto Cotto (cooked ham) 1 slice
Extra virgin olive oil to taste
Salt to taste
Fontina cheese 1 slice

Instructions:

  1. Begin by thoroughly washing the songino (lamb’s lettuce). Once clean, place it in a bowl and drizzle it with extra virgin olive oil and a pinch of salt to taste. Toss it gently to coat.

  2. Take a slice of Milano salami and fold it in half to form a delicate rose shape. Carefully curl the edges to create a spiral, placing the rose on a platter.

  3. Now, take a slice of speck and roll it up on itself, forming a tight roll. This will add a smokey flavor and visual contrast to your dish.

  4. Next, prepare the olive skewers. On a square serving plate, lay two pieces of olive skewers vertically, parallel to each other. Then, add two more skewers horizontally at each end to form a square shape.

  5. Repeat the same process to create a second square layer, which you’ll place on top of the first. Finish the box with two more vertical skewers, forming a sturdy “box” shape for your olives and other ingredients.

  6. Now, carefully fill the olive box with the prepared songino. Place the salami roses and slices of cheese—Fontina in this case—alongside, arranging them beautifully to create a delightful presentation.
