Carrot (Gajjar) 1, peeled and sliced
Potato (Aloo) 1, peeled and diced
Green Zucchini 1, peeled and diced
Cauliflower (Gobi) 1 cup, cut into florets
Green Peas (Matar) 1/2 cup
Paneer (Homemade Cottage Cheese) 2 cups, cut into cubes
Kasuri Methi (Dried Fenugreek Leaves) 1 tablespoon

Instructions:

  1. Prep the Ingredients: Begin by preparing all the ingredients. Slice and chop the vegetables, grate or chop the ginger and garlic, and cut the paneer into cubes. Have everything ready before you start cooking.

  2. Saute the Base: Turn the Preethi Electric Pressure Cooker to the saute mode. Let the cooker heat up for a few minutes, then add 1 tablespoon of salted butter to the pan. Allow the butter to melt and then add the chopped onions, ginger, and garlic. Saute them until the onions soften and turn golden brown, about 3-4 minutes.

  5. Cook the Curry: Secure the lid of the pressure cooker and switch to gravy mode. Turn the pressure nozzle to the pressure mode and cook the curry for 15 minutes. Once the cooking time is up, allow the pressure cooker to naturally release the pressure, which should take about 5-10 minutes. Once the pressure is released, open the cooker and check the salt and seasoning levels. Adjust if necessary.
