Ingredients

Ginger 1 inch, grated
Tomatoes 2, pureed
Cumin seeds 1/2 teaspoon
Turmeric Powder 1 teaspoon
Garam Masala Powder 1 teaspoon

Red Chilli Powder 1/4 teaspoon
Fresh Coriander Leaves 2 sprigs, finely chopped
Oil As required

Instructions

  1. Heat the Oil:
    In a pressure cooker, heat oil over medium flame. Once hot, add cumin seeds, grated ginger, and cardamom. Sauté for about 10 seconds or until aromatic.

  2. Add Main Ingredients:
    Add the pureed tomatoes, chopped potatoes, and cabbage. Sprinkle in salt, red chilli powder, turmeric powder, and garam masala. Pour in 1/4 cup of water to help the vegetables cook evenly.

  3. Pressure Cook:
    Stir everything well, close the cooker lid, and cook on medium heat until you hear 3 whistles. This should take about 10-15 minutes, depending on your cooker.

  4. Release Pressure and Garnish:
    After the pressure has naturally released, open the lid carefully. Give the dish a final stir to ensure all spices and vegetables are well-mixed. Garnish with freshly chopped coriander leaves.

  5. Serve and Enjoy:
    Serve the One Pot Aloo Gobi hot, paired with boondi raita and fresh tava parathas for a traditional and hearty meal.
