Ingredients:

  • 1 cup shitake mushrooms
  • 1 cup white mushrooms
  • 1/2 onion
  • 1 cup dry red wine
  • 2/3 cup Panko breadcrumbs
  • 3 tablespoons parsley, chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon light soy sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon dried oregano
  • 1 egg
  • 1 tablespoon flour
  • 1 cup chicken broth

Instructions:

  1. Preparation: Preheat your oven to 350 degrees Fahrenheit.

  2. Cook Mushrooms and Onions: In a medium nonstick skillet, combine the shitake mushrooms, white mushrooms, onion, and 1/4 cup of red wine. Bring the mixture to a boil, then reduce the heat to medium-low. Cover and cook for about 10 minutes, stirring occasionally, until the vegetables are tender.

  3. Prepare Turkey Mixture: In a large mixing bowl, combine the ground turkey, Panko breadcrumbs, chopped parsley, 1 tablespoon of tomato paste, Worcestershire sauce, minced garlic, thyme, salt, pepper, oregano, and egg. Mix well to incorporate all the ingredients.

  4. Incorporate Mushrooms and Onions: Stir in the cooked mushroom and onion mixture into the turkey mixture until evenly distributed.

  5. Shape the Meatloaf: Shape the turkey mixture into an 8Γ—5-inch loaf and place it in a glass baking dish.

  6. Top with Tomato Paste and Wine: Spread the remaining 1 tablespoon of tomato paste over the top of the meatloaf. Pour the remaining 1/4 cup of red wine into the baking dish around the meatloaf.

  7. Bake: Cover the baking dish tightly with foil and bake in the preheated oven for 45 minutes, or until the meatloaf is cooked through.

  8. Prepare Lite Gravy: While the meatloaf is baking, make the lite gravy. Heat oil in a small saucepan over medium heat. Stir in the flour until smooth. Gradually whisk in the chicken broth. Bring the mixture to a boil and let it boil for 3-5 minutes, or until thickened. Season with pepper to taste.

  9. Serve: Once the meatloaf is done, slice it and serve with Oprah’s classic potatoes for a delicious and satisfying meal.
