3/4 Sour cream
1/2 Butter
1 Instant coffee
2 Water
1 Marshmallow cream

Instructions:

  1. Prepare Pan: Line a 13 x 9-inch pan with foil, leaving a 1-inch overhang on two of the sides (short sides of the pan). Lightly butter the foil. This will help you to get the fudge out later on and keeps the pan clean. Set aside.

  2. Prepare Mixture: Lightly butter a large microwave-safe bowl. Place granulated sugar, sour cream, butter, and instant coffee mixed with water into the bowl.

  3. Microwave: Microwave on high for 5-6 minutes or until the mixture boils. Stir after 2-1/2 and 5 minutes.

  4. Boil Mixture: After the sugar mixture comes to a full rolling boil, continue microwaving on high for 5-6 minutes longer (stir after 3 minutes), or until the mixture reaches soft-ball stage (234Β°F) on a candy thermometer. Do not leave the thermometer in the bowl while the microwave is on. Keep microwaving until the thermometer reads 234Β°F.

  5. Add Ingredients: Remove the bowl from the microwave; add vanilla chips, marshmallow cream, and orange peel. Stir until smooth.

  6. Pour and Smooth: Pour the mixture into the foil-lined pan. Smooth it evenly into the corners with a narrow metal spatula or a knife.

  7. Score Candy: Let the fudge sit for about 2 minutes, then score (mark) it into 70 squares. Allow the candy to sit until firm.

  8. Cut and Garnish: Remove from the pan by lifting on the foil. Place the foil onto a cutting board and cut along score lines into squares. Remove the candy from the foil and garnish with orange peel strips if desired.
