Beetroot done this way is divine! Most people I find are so pleasantly surprised when they discover the gorgeous flavor of this dish. I lost count of the number of times I’ve written the recipe out for friends! It’s a real winner! A 440g can of beetroot can be substituted for cooked beetroot – just drain and heat through in the sauce. The fresh beetroot takes a while to cook, but it’s worth it!

Ingredients:

  • 500g beetroots
  • 2 tablespoons brown sugar
  • 1 tablespoon cornflour
  • 15g butter
  • 2 tablespoons vinegar
  • 1 cup water
  • 1 orange, strained juice and peel thinly sliced

Instructions:

  1. Cook the Beetroot:

    • Place the beetroots in a pot of boiling salted water.
    • Cook for about 1 hour or until tender.
  2. Prepare Beetroot:

    • Drain and peel the cooked beetroots.
    • Slice them, or use a melon baller to make small balls.
  3. Make the Orange Sauce:

    • In a saucepan, combine brown sugar, vinegar, strained orange juice, and butter.
    • Heat the mixture over medium heat until the sugar dissolves.
  4. Thicken the Sauce:

    • In a small bowl, mix cornflour with water to create a slurry.
    • Stir the slurry into the orange juice mixture.
    • Continue stirring until the mixture boils and thickens.
  5. Combine and Serve:

    • Add the cooked beetroot to the saucepan and heat through.
    • Transfer the beetroot onto a serving dish.
    • Pour the orange sauce over the beetroot.
    • Garnish with thinly sliced orange peel arranged on top.
