Beetroot done this way is divine! Most people I find are so pleasantly surprised when they discover the gorgeous flavor of this dish. I lost count of the number of times I’ve written the recipe out for friends! It’s a real winner! A 440g can of beetroot can be substituted for cooked beetroot – just drain and heat through in the sauce. The fresh beetroot takes a while to cook, but it’s worth it!

Ingredients:
- 500g beetroots
- 2 tablespoons brown sugar
- 1 tablespoon cornflour
- 15g butter
- 2 tablespoons vinegar
- 1 cup water
- 1 orange, strained juice and peel thinly sliced
Instructions:

Cook the Beetroot:
- Place the beetroots in a pot of boiling salted water.
- Cook for about 1 hour or until tender.

Prepare Beetroot:
- Drain and peel the cooked beetroots.
- Slice them, or use a melon baller to make small balls.

Make the Orange Sauce:
- In a saucepan, combine brown sugar, vinegar, strained orange juice, and butter.
- Heat the mixture over medium heat until the sugar dissolves.

Thicken the Sauce:
- In a small bowl, mix cornflour with water to create a slurry.
- Stir the slurry into the orange juice mixture.
- Continue stirring until the mixture boils and thickens.

Combine and Serve:
- Add the cooked beetroot to the saucepan and heat through.
- Transfer the beetroot onto a serving dish.
- Pour the orange sauce over the beetroot.
- Garnish with thinly sliced orange peel arranged on top.
