Broccoli With Orange & Yogurt
Description: Some of you will want to cook the broccoli longer than the 5 minutes, but I like mine crisp. Lovely smooth sauce that you may want to use on other veggies. Not too bad on the calories either.

Ingredients:
- 3 broccoli florets
- 2 tablespoons margarine
- 2 tablespoons flour
- 1/2 cup plain yogurt
- 1/2 teaspoon orange zest
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt (optional)

Prepare Ingredients: Wash the broccoli florets and set aside. Melt the margarine in a saucepan over medium heat. Once melted, blend in the flour until smooth.

Make the Sauce: Gradually stir in the remaining ingredients (except the broccoli) – plain yogurt, orange zest, dried thyme, and optionally salt. Cook over low heat, stirring continuously, until the mixture thickens to a smooth sauce consistency.

Cook the Broccoli: While making the sauce, steam or boil the broccoli florets until tender yet crisp, about 5 minutes. Drain and keep warm.

Serve: Arrange the cooked broccoli florets on a serving dish or individual plates. Pour the warm orange yogurt sauce over the hot broccoli.
