Instructions

  1. Start with the Pastry Cream:
    Begin by preparing the pastry cream. In a small saucepan, heat the milk over low to medium heat, just until warm. In a separate bowl, whisk together the egg yolks and sugar until the mixture becomes smooth and homogenous. Once this is achieved, sift the cornstarch into the egg mixture and combine thoroughly.

  2. Temper the Egg Mixture:
    Gradually add a ladleful of the warm milk into the egg mixture to temper it, stirring constantly to prevent the eggs from cooking. Once well-mixed, pour the egg mixture back into the saucepan with the rest of the milk.

  3. Cook the Cream:
    Cook the mixture over medium heat, stirring continuously, until it thickens into a smooth cream. Once thickened, remove from the heat and transfer the cream into a clean bowl. Cover the bowl with plastic wrap directly on the surface of the cream to prevent a skin from forming. Let it cool to room temperature before placing it in the refrigerator to chill and firm up.

  4. Prepare the Cake Batter:
    While the pastry cream is cooling, prepare the cake batter. In a small saucepan, gently warm the orange honey until it becomes liquid. Remove from heat and stir in the butter and yogurt until fully combined.

  5. Separate the Eggs:
    Separate the egg whites from the yolks. Whisk the egg whites until stiff peaks form and set aside.

  6. Mix the Dry Ingredients:
    In a separate bowl, sift together the all-purpose flour, potato starch, cinnamon, and baking powder. Set aside.

  7. Combine Wet and Dry Ingredients:
    Gradually fold the sifted dry ingredients into the honey mixture. Once combined, gently fold in the whipped egg whites to form a light and airy batter.

  8. Bake the Cake:
    Preheat your oven to 200°C (390°F) on static mode. Pour the batter into a greased and floured cake pan. Bake for about 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  9. Cool and Serve:
    Once the cake is baked, remove it from the oven and allow it to cool for a few minutes. Then, turn it out onto a wire rack to cool completely. Once cooled, dust the top of the cake with powdered sugar before serving.
