Orange Coffee with Milk Foam

Instructions:

  1. Prepare the Orange Syrup:
    Start by preparing the orange syrup. Using a vegetable peeler or a sharp knife, peel the skin off the orange. Blanch the orange peel in boiling water for 3 minutes, changing the water each time. Once done, drain the peel well and set it aside.

  2. Make the Syrup:
    In a saucepan, combine 140ml of water and the sugar. Stir occasionally to help the sugar dissolve, and bring the mixture to a gentle boil over low heat. Stir frequently to prevent the sugar from burning. When it begins to boil, add the orange peel and simmer for another 5 minutes.

  3. Cool the Syrup:
    After the syrup has been simmering for 5 minutes, remove it from the heat and transfer the syrup (with the peel) into a bowl. Let it cool down to room temperature.

  4. Brew the Coffee:
    While the syrup is cooling, brew the coffee using a coffee maker. To make sure your coffee is perfect, fill the bottom chamber of the coffee maker with cold, preferably low-calcium water. Be careful not to exceed the safety valve. Tap the filter gently on the table to level it off, but do not press it down or puncture the surface. Assemble and start the coffee maker to brew the coffee.

  5. Froth the Milk:
    In a tall, narrow container, pour the milk (it must be cold), and froth it using an immersion blender. Focus on frothing the surface, allowing the milk to become foamy.

  6. Assemble the Drink:
    For each of the 4 medium-sized glass cups, pour 20ml of the cooled orange syrup and add a few small pieces of the orange peel. Then, pour 40ml of the hot brewed coffee into each cup, mixing gently with the syrup.

  7. Add the Milk Foam:
    Finish your orange coffee by topping it with the milk foam, creating a light and airy layer on top. For an added touch, sprinkle a small amount of ground cinnamon over the foam.

  8. Serve and Enjoy:
