Ingredients:

2 cups bread flour
1 2/3 cups wheat flour

2 teaspoons salt

1/4 teaspoon red food coloring
75 drops red food coloring (optional)
45 drops yellow food coloring (optional)
30 drops blue food coloring (optional)
Cornmeal (for sprinkling)

Instructions:

  1. In a large bowl, combine the bread flour, wheat flour, granulated sugar, instant coffee, and salt.

  2. Create a depression or “well” in the middle of the dry mixture.

  3. Pour the warm water into the “well,” then add the butter, honey, yeast, and red food coloring.

  4. Slowly mix the ingredients with a spoon, drawing the dry ingredients into the wet.

  5. Once you can handle the dough, begin combining it by hand, kneading thoroughly for at least ten minutes until smooth and consistent in color.

  6. Place the dough in a covered bowl in a warm place for one hour to allow it to rise.

  7. After the dough has doubled in size, punch it down and divide it into 8 equal portions.

  8. Shape each portion into tubular loaves about 8 inches long and 2 inches wide.

  9. Sprinkle the entire surface of the loaves with cornmeal and place them on a cookie sheet or two.

  10. Cover the cookie sheet(s) with plastic wrap and let the dough rise for another hour in a warm location.

  11. Preheat the oven to 350°F (175°C).

  12. Uncover the dough and bake for 20-24 minutes until the loaves begin to darken slightly on top.

  13. Serve warm with a sharp bread knife and butter on the side. For whipped butter, use an electric mixer on high speed until fluffy.
