Baked Chicken Thighs with Apples

White wine 50g
Extra virgin olive oil 40g
Fine salt 10g
Sweet paprika To taste
Black peppercorns To taste

Fresh rosemary To taste
Fresh thyme To taste
Fuji apples 500g
Brown sugar 5g

Instructions:

  1. Prepare the Herb and Spice Mixture:
    Start by finely chopping the fresh herbs: parsley, sage, rosemary, and thyme. Set them aside for later use. Next, place the black, white, and pink peppercorns, along with the juniper berries, into a mortar and grind them into a fine powder.

  2. Seasoning the Chicken:
    In a large mixing bowl or a jug, combine the finely chopped herbs with the ground spices. Add the olive oil, 10g of salt, and the white wine. Stir everything together with a spoon to create a flavorful marinade.

  3. Prepare the Baking Dish:
    Grease the bottom of a baking dish with a little olive oil. Place the chicken thighs in the dish, arranging them closely together. Next, generously cover the chicken with the prepared herb and spice mixture, ensuring each piece is well-coated.

  4. Bake the Chicken:
    Preheat the oven to 180°C (350°F) in static mode (without fan). Bake the chicken thighs for 45 minutes, or until the skin is golden and crispy, and the chicken is fully cooked through.

  5. Prepare the Apple Compote:
    While the chicken is baking, wash and dry the apples. Cut each apple in half, remove the core, and then slice into quarters before chopping them into small, irregular pieces.

  6. Cook the Apple Mixture:
    In a skillet, add the chopped apples along with the brown sugar and 5g of salt. Cook over medium heat, stirring occasionally, to melt the sugar. Once the sugar has dissolved, add the water, reduce the heat, and simmer for about 10 minutes until the apples become soft and tender.

  7. Finishing Touches:
    By now, the chicken should be golden and crispy on the outside, fully cooked and tender on the inside. Remove it from the oven and serve it hot, accompanied by the warm, sweet apple compote.
