Ingredients:
- 1 onion
- 12 garlic cloves
- 3/4 eggplant
- 1/2 zucchini
- 1 plum tomato
- 1 fennel bulb
- 1 mushroom
- 1 yellow sweet pepper
- 1 sprig fresh thyme
- 1 tsp dried thyme
- 1 sprig fresh rosemary
- 1 tsp dried rosemary
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/4 cup fresh basil
- 1/4 cup fresh parsley
- 1 tbsp olive oil

Spread the onion, garlic, eggplant, zucchini, tomatoes, fennel, mushrooms, and sweet peppers in the prepared roasting pan.

Sprinkle the vegetables with rosemary, thyme, salt, and pepper.

Roast the vegetables in the preheated oven for about 45 minutes, stirring occasionally, until they are tender and browned.

Remove the roasted vegetables from the oven and toss them with fresh basil, parsley, and olive oil.

Taste the ratatouille and adjust the seasonings if necessary.
