Padang-Style Grilled Tilapia with Spicy Clams

Grilled Tilapia and Clams in Padang Sauce

Ingredients

Tilapia 1 whole fish
Clams (any kind) ½ kg
Red chili 1 piece
Shallots 3 cloves
Garlic 3 cloves
Onion (large) 1
Ginger 1-inch piece
Tomato sauce 2 tablespoons
Oyster sauce 2 tablespoons
Chili sauce 2 tablespoons
Water ½ cup
Salt To taste
Sugar To taste
Pepper To taste

Instructions

  1. Prepare the Fish and Clams:

    • Clean the tilapia and clams thoroughly. Set the tilapia aside for frying.
    • Boil the clams with the ginger (crushed) for about 5-10 minutes. Drain and set aside.
  2. Fry the Tilapia:

    • Heat oil in a pan and fry the tilapia until it is crispy and golden brown. Set aside on a serving plate.
  3. Prepare the Sauce:

    • Finely chop the onion and roughly grind the shallots, garlic, red chili, and a small amount of ginger.
    • Heat a bit of oil in a pan, then sauté the chopped onion until it becomes fragrant and soft.
    • Add the ground mixture of shallots, garlic, chili, and ginger to the pan, stirring and cooking until the spices release their aroma.
  4. Simmer the Sauce:

    • Pour in ½ cup of water into the pan. Stir and let it come to a simmer.
    • Once the water boils, add the tomato sauce, oyster sauce, chili sauce, salt, sugar, and pepper. Adjust the seasoning according to your taste.
  5. Cook the Clams:

    • Add the boiled clams to the sauce, stirring to coat them evenly. Let the clams cook in the sauce until it thickens and the flavors meld together.
  6. Serve:

    • Pour the cooked clams and sauce over the fried tilapia on the serving plate.
