Sardine and Potato Stew Padang Style

Ingredients:

  • 1 kg sardines (fresh or canned)
  • 1/4 kg potatoes, cut into cubes
  • 100 grams coarse ground green chilies
  • 5 shallots, thinly sliced
  • 1 tomato, finely chopped
  • Salt to taste

Instructions:

  1. Prepare the Potatoes: Start by frying the potato cubes until they are golden and crispy. Set aside.

  2. Sauté Aromatics: In a large pan, heat a bit of oil over medium heat. Add the sliced shallots and sauté until they become soft and translucent.

  3. Add Chilies and Tomato: Incorporate the coarse ground green chilies and finely chopped tomato into the pan. Cook the mixture, stirring occasionally, until the tomatoes break down and the flavors meld together.

  4. Combine with Sardines: Gently stir in the sardines, ensuring they are well coated with the spicy tomato mixture. Let it cook for a few minutes to allow the sardines to absorb the flavors.

  5. Add Potatoes: Finally, add the fried potato cubes to the pan. Stir carefully to combine, and let the dish simmer for a few more minutes until everything is heated through and the flavors are well blended.

  6. Season: Season with salt to taste, adjusting as necessary to balance the flavors.

  7. Serve: Serve hot with steamed rice or your favorite side dish.

Enjoy this flavorful and hearty Padang-style stew that brings together the richness of sardines with the comforting texture of potatoes.
