Ingredients:

  • 1 onion
  • 2 tablespoons sweet paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 pounds skinless chicken thighs
  • 4 teaspoons flour
  • 1 cup 1% low-fat milk
  • 1 cup plum tomatoes
  • 1 cup fat-free sour cream

Recipe Instructions:

  1. In a large, non-stick frypan sprayed with vegetable oil, cook the onions for about 2 minutes until translucent.

  2. Add the sweet paprika to the onions and continue cooking for an additional 2 minutes, allowing the flavors to meld.

  3. Season the chicken thighs with salt and pepper, then add them to the pan. Brown the chicken for 5 minutes on each side until golden.

  4. Reduce the heat to medium and stir 3 teaspoons of flour into the milk. Pour the milk mixture over the chicken in the pan.

  5. Bring the mixture to a simmer, then reduce the heat to medium-low. Cover the pan and let it simmer for 10 minutes, allowing the chicken to cook through.

  6. Stir in the plum tomatoes and red pepper, then cover the pan and let it simmer for an additional 10 minutes until the chicken is fully cooked and no longer pink inside.

  7. While the chicken simmers, cook the pasta according to package directions. Drain the pasta and divide it between 4 serving plates.

  8. Remove the chicken from the pan and divide it between the serving plates, arranging it on top of the pasta.

  9. Reduce the heat to low. Whisk the remaining 1 teaspoon of flour into the sour cream, then add it to the tomato mixture in the pan.

  10. Cook the sauce for 1 minute, stirring well to combine all the ingredients. Season the sauce with salt to taste.

  11. Pour 1/4 of the sauce over each serving of chicken and pasta, ensuring each plate is generously coated with the flavorful sauce.

  12. Garnish with parsley if desired, adding a fresh touch to the dish before serving.

Enjoy your Chicken Paprika Lite! 🍗🌶️🍝
