Akoori with Green Peas (Parsi Style Scrambled Eggs with Green Peas)

Akoori, a beloved dish in Parsi cuisine, offers a delicious twist on scrambled eggs. Known for its creamy and runny texture, this Parsi-style scrambled eggs are a far cry from the traditional English version. The dish is enriched with aromatic spices, such as traditional Parsi curry powder or sambar masala, along with the healthy addition of green peas. A perfect blend of hot, sweet, and spicy flavors, Akoori makes for a delightful breakfast, served with toasted bread or pav, and enjoyed with a cup of Masala chai.

Ingredients:

  • 7 Whole Eggs
  • 1/2 cup Green peas (Matar)
  • 2 Onions, finely chopped
  • 4 Tomatoes, finely chopped
  • 2 Green Chillies, finely chopped
  • 1 teaspoon Ginger Garlic Paste
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Curry powder
  • 1 teaspoon Red Chilli powder
  • 3 tablespoons Coriander (Dhania) Leaves, finely chopped
  • 2 teaspoons Oil
  • 1 teaspoon Lemon juice
  • 1 teaspoon Ginger, julienned (for garnish)
  • Salt, to taste

Preparation Time: 5 minutes
Cooking Time: 10 minutes

Instructions:

  1. Heat oil in a pan and add the chopped onions along with ginger garlic paste. Sauté until the onions become translucent.
  2. Add the green chillies and chopped tomatoes, and sauté for 2 minutes.
  3. Stir in the green peas, turmeric powder, red chilli powder, and curry powder. Cook until the peas are tender.
  4. In a large bowl, whisk the eggs until fluffy. Pour the eggs into the pan with the seasoned mixture.
  5. Season with salt and sauté gently to achieve the desired creamy and runny scrambled eggs.
  6. Turn off the heat, then add the chopped coriander leaves and lemon juice. Mix well.
  7. Garnish with julienned ginger for a fresh touch.

Serving Suggestion:
Serve the Akoori with Green Peas hot, alongside toasted bread or pav, and a cup of Masala chai for a fulfilling breakfast experience.
