Ingredients:
- 8 brinjals, chopped
- 1½ green capsicum, chopped
- 1 cup tomatoes, chopped
- 1 onion, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon Dhansak masala
- Salt, to taste
- 2 sprigs coriander leaves, finely chopped
- Oil, as needed

Heat oil in a pan. Add the chopped brinjal and capsicum. Cook until they are tender. Remove from the pan and set aside. -
