Ghee Tooria Per Eda Recipe – Parsi Style Ridge Gourd with Fried Eggs

Ingredients Quantity
Ridge Gourd (Turai/Peerkangai) 2 pieces
Whole Eggs 6
Onion (finely chopped) 1
Green Chillies (finely chopped) 4
Ginger (finely chopped) ½ inch piece
Cumin Seeds (Jeera) 1 teaspoon
Red Chilli Powder 1 teaspoon
Cumin Powder (Jeera) 1 teaspoon
Garam Masala Powder 1 teaspoon
Black Pepper Powder ½ teaspoon
Sunflower Oil 3 tablespoons
Salt To taste

Instructions:

  1. Prepare the Eggs:
    Heat 2 tablespoons of sunflower oil in a wok over medium heat. Crack the 6 eggs into the hot oil, season with salt and black pepper powder, and gently scramble until cooked and slightly crisped. Remove from the pan and set aside.

  2. Prepare the Ridge Gourd:
    Lightly peel the sharp edges of the ridge gourd and chop it into small pieces.

  3. Cook the Vegetables:
    In the same pan, add 1 tablespoon of oil. Once heated, add cumin seeds and let them crackle. Then, add the finely chopped onions, ginger, and green chilies. Sauté until the onions turn pink and soft.

  4. Add Spices and Gourd:
    Stir in the red chilli powder and cumin powder. Add the chopped ridge gourd and sauté. The ridge gourd cooks quickly; there’s no need to add water as it releases its own moisture.

  5. Combine and Serve:
    Once the gourd is fully cooked, add the scrambled eggs and mix well. Sprinkle garam masala over the top and give it a final stir before turning off the heat. Garnish with fresh coriander leaves.

  6. Serving Suggestion:
    Serve Ghee Tooria Per Eda hot, paired with slices of Whole Wheat Bread with Oatmeal and Flaxseeds, and enjoy with a steaming cup of Masala Chai.
