Prepare the Eggs:
Heat 2 tablespoons of sunflower oil in a wok over medium heat. Crack the 6 eggs into the hot oil, season with salt and black pepper powder, and gently scramble until cooked and slightly crisped. Remove from the pan and set aside. -
Prepare the Ridge Gourd:
Lightly peel the sharp edges of the ridge gourd and chop it into small pieces. -
Cook the Vegetables:
In the same pan, add 1 tablespoon of oil. Once heated, add cumin seeds and let them crackle. Then, add the finely chopped onions, ginger, and green chilies. Sauté until the onions turn pink and soft. -
Add Spices and Gourd:
Stir in the red chilli powder and cumin powder. Add the chopped ridge gourd and sauté. The ridge gourd cooks quickly; there’s no need to add water as it releases its own moisture. -
Combine and Serve:
Once the gourd is fully cooked, add the scrambled eggs and mix well. Sprinkle garam masala over the top and give it a final stir before turning off the heat. Garnish with fresh coriander leaves. -
