Russian Pattice (Parsi Chicken Cutlet)

Cuisine: Parsi
Course: Appetizer
Diet: Non-Vegetarian

Ingredients:

  • 2 Potatoes (Aloo), boiled and peeled
  • 200 grams Chicken breasts
  • 1/2 cup Cheese, grated
  • 1/2 tablespoon Garlic, paste
  • 1/2 tablespoon Ginger, paste
  • 2 Green Chillies, finely chopped
  • 2 sprigs Coriander (Dhania) Leaves, chopped
  • 1/3 cup Whole Wheat Bread crumbs
  • Salt, to taste
  • 1 teaspoon Black pepper powder
  • 1 teaspoon Garam masala powder

For Coating:

  • 1 Whole Egg
  • 1/4 cup Sooji (Semolina/ Rava)
  • 1/2 cup Whole Wheat Bread crumbs

Preparation Time:

10 minutes

Cooking Time:

15 minutes

Instructions:

  1. Prepare the Chicken:

    • Begin by boiling the chicken breasts. In a saucepan, heat water with a pinch of salt. Bring it to a brisk boil, then add the chicken breasts. Cook for about 3-5 minutes until just tender.
    • Once cooked, drain the excess water and shred the chicken into small pieces. Transfer to a bowl.
  2. Prepare the Mixture:

    • To the shredded chicken, add the boiled and mashed potatoes, grated cheese, garlic paste, ginger paste, chopped green chillies, coriander leaves, bread crumbs, salt, black pepper powder, and garam masala powder.
    • Mix well to combine the ingredients thoroughly, forming a cohesive mixture.
  3. Form the Pattice:

    • Divide the mixture into equal portions. Roll each portion into a ball and then flatten it gently between your palms to form a round disc shape.
  4. Coating the Pattice:

    • Preheat oil in a kadai (or use a shallow frying method) over medium-high heat.
    • In a small bowl, whisk the egg. In another bowl, mix together the semolina (rava) and whole wheat bread crumbs.
    • Dip each pattice first into the egg, ensuring it is fully coated. Then roll it into the rava-bread crumb mixture, pressing lightly to coat evenly.
  5. Frying:

    • Drop the coated pattices into the hot oil and fry until they turn golden brown and crispy on both sides.
  6. Serving:

    • Serve the Russian Pattice hot, as a delightful tea-time snack or as part of a Parsi meal.
    • Pair it with green chutney or tomato ketchup for an extra flavor boost.

Enjoy the crispy, cheesy, and flavorful Parsi-style chicken cutletsโ€”perfect for any occasion!
