Parsi Style Scrambled Eggs with Green Peas (Akuri)

Akuri is a popular breakfast dish in Parsi households, where eggs are scrambled with a flavorful blend of spices. The eggs are cooked until just set, giving it a creamy texture. The addition of Parsi masala or sambhar masala elevates the taste, making this dish rich and delicious.

Ingredients:

  • 7 eggs
  • 1/2 cup green peas
  • 2 onions, finely chopped
  • 4 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp curry powder
  • 1 tsp red chili powder
  • 3 tbsp fresh coriander, finely chopped
  • 2 tsp oil
  • 1 tsp lemon juice
  • 1 tsp ginger, julienned (for garnish)
  • Salt, to taste

Preparation Time: 5 minutes
Cooking Time: 10 minutes

Instructions:

  1. Heat oil in a pan. Add the chopped onions and ginger-garlic paste. Cook until the onions turn soft and translucent.
  2. Once the onions are soft, add the green chilies and tomatoes. Cook for another 2 minutes until the tomatoes soften.
  3. Add the green peas, turmeric powder, red chili powder, and curry powder. Cook until the peas are tender.
  4. In a separate bowl, crack the eggs and whisk them well. Pour the whisked eggs into the pan. Add salt to taste and stir continuously to avoid overcooking the eggs.
  5. Once the eggs are about 75% cooked, turn off the heat. Garnish with fresh coriander and julienned ginger.
  6. Serve hot with toast and masala chai for a complete meal.
