Parsi Style Scrambled Eggs with Green Peas (Akuri)

Ingredients:
- 7 eggs
- 1/2 cup green peas
- 2 onions, finely chopped
- 4 tomatoes, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp curry powder
- 1 tsp red chili powder
- 3 tbsp fresh coriander, finely chopped
- 2 tsp oil
- 1 tsp lemon juice
- 1 tsp ginger, julienned (for garnish)
- Salt, to taste
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Instructions:
- Heat oil in a pan. Add the chopped onions and ginger-garlic paste. Cook until the onions turn soft and translucent.
- Once the onions are soft, add the green chilies and tomatoes. Cook for another 2 minutes until the tomatoes soften.
- Add the green peas, turmeric powder, red chili powder, and curry powder. Cook until the peas are tender.
- In a separate bowl, crack the eggs and whisk them well. Pour the whisked eggs into the pan. Add salt to taste and stir continuously to avoid overcooking the eggs.
- Once the eggs are about 75% cooked, turn off the heat. Garnish with fresh coriander and julienned ginger.
- Serve hot with toast and masala chai for a complete meal.
