Instructions

Prepare the Dal:
- Start by rinsing the tuvar dal (arhar dal) thoroughly and soaking it in about 2 cups of water. Let it soak for a few minutes to soften.

Grind the Spice Paste:
- In a mixer grinder, add the green coriander, green chili, ginger, garlic, dry red chilies, cumin seeds, coriander seeds, cinnamon stick, cloves, black pepper, and khus khus. Grind all the ingredients into a smooth paste using a little water if necessary.

Cook the Base:
- Heat ghee in a pressure cooker over medium heat. Add the chopped onion and sauté until it turns golden brown and soft.
- Add the chopped tomato to the cooked onions and cook for about 5 minutes until the tomatoes soften and release their juices.

- Add the freshly ground spice paste to the cooker and cook for an additional 10 minutes, allowing the flavors to meld and the spices to roast.

- In a small pan, heat ghee for tempering. Once the ghee is hot, add the cumin seeds and sauté for 15 seconds until fragrant. Remove from heat.
