Ricotta cheese | 300g |
Fresh cream | 250g |
Powdered sugar | 120g |
Passion fruit juice | 70g |
Powdered sugar (for syrup) | 1 tablespoon |
Passion fruits | 3 |
Dark chocolate | q.b. |
Instructions
-
Prepare the Gelatin
Start by soaking the gelatin sheets in cold water for a few minutes. While the gelatin is soaking, prepare the passion fruit. -
Extract the Passion Fruit Juice
Cut the passion fruits in half, scoop out the pulp, and pass it through a fine sieve to collect the juice. Use a small spatula to help press the seeds and extract the juice. You’ll need 70g of juice for this recipe. -
Heat the Juice
Pour the passion fruit juice into a small saucepan and place it over low heat. Warm it slightly, then add the gelatin sheets that have been squeezed out to remove excess water. Stir until the gelatin is completely dissolved into the juice. -
Combine Ingredients
Sift the powdered sugar into a bowl, then add the passion fruit juice mixture. Use a whisk to combine everything thoroughly until smooth. -
Whisk the Ricotta and Cream
In a separate large mixing bowl, whisk together the ricotta cheese and fresh cream until smooth. Add the powdered sugar (120g) and continue mixing until you have a thick and creamy texture. -
Blend the Mixtures
Gradually fold the passion fruit mixture into the ricotta and cream mixture. Use a spatula to gently mix everything together, ensuring you maintain the light texture of the cream. -
Mold the Semifreddo
Pour the mixture into heart-shaped molds. Tap the molds gently to remove any air bubbles and make the surface smooth. Place the molds in the refrigerator to set for 3 to 4 hours, or until the semifreddo is firm. -
Prepare the Passion Fruit Sauce
While the semifreddo sets, prepare the passion fruit sauce. Cut the remaining three passion fruits in half, scoop out the pulp, and strain it to collect the juice. Pour the juice into a small saucepan and cook over low heat, whisking constantly to emulsify the mixture. Once it thickens slightly, remove from heat and let it cool completely. -
Serve the Semifreddo
Once the semifreddo has set, carefully remove it from the molds. Place a spoonful of passion fruit sauce onto each plate. Gently place the semifreddo hearts on top of the sauce. -
Garnish and Serve
For the finishing touch, decorate with small chocolate leaves or any other chocolate decoration you prefer. Serve chilled and enjoy this tropical, creamy dessert!
