Instant savory yeast 12g

Soft cheese (fresh spreadable) 250g
Cooked ham (diced) 100g

Instructions:

  1. Prepare the peas: Begin by cleaning the fresh peas. Open the pods and remove the peas, placing them in a bowl for later use.

  2. Dice the onion and bacon: Take half of the red onion, peel and finely chop it. Next, dice the bacon into small cubes. You can choose between sweet or smoked bacon, depending on your preference. If you don’t want to use fresh bacon, pre-packaged diced bacon can also work.

  3. Cook the onion and bacon: Heat a small drizzle of olive oil in a non-stick frying pan over medium heat. Add the chopped onion and sauté it until it becomes soft and golden brown. Then, add the diced bacon and cook for 15-20 minutes, stirring occasionally. If necessary, add a little water to help the cooking process. Once the bacon is crispy and the onion is caramelized, remove the pan from the heat and let it cool.

  4. Prepare the scone dough: While the bacon and onion cool, combine the flour, salt, and instant savory yeast in a large mixing bowl. Mix the dry ingredients thoroughly. Next, pour in the milk and mix until the dough starts to come together.

  5. Add the peas and bacon: Once the dough has formed, add the cooled peas, bacon, and thyme leaves to the bowl. Use your hands to gently knead the dough until it is well incorporated.

  6. Roll out the dough: Lay a piece of parchment paper on your work surface. Place the dough on the paper and, using your hands, shape it into a ball. Cover it with another piece of parchment paper and roll it out gently with a rolling pin until the dough is about 1.5 cm thick.

  7. Shape the scones: Using a 6.5 cm round cookie cutter, cut out circles from the rolled dough. Transfer each circle onto a baking sheet lined with parchment paper.

  8. Bake the scones: Preheat the oven to 180°C (350°F). Bake the scones for 15-20 minutes or until golden brown on top. Once baked, remove the scones from the oven and allow them to cool on a wire rack.

  9. Serve the scones: Once cooled, carefully slice each scone in half. Spread a generous layer of soft cheese (or mascarpone if preferred) on the cut side of each scone. Serve and enjoy these savory, delicious bites.
