Peach Bellini Granita: A Refreshing Summer Dessert

White wine 250 ml

Instructions:

To prepare the delightful Bellini granita, begin by making the syrup. In a saucepan, add the sugar and pour in the white wine. Stir gently and allow the sugar to dissolve completely. Heat the mixture just enough for the syrup to reach a slight simmer, but do not let it come to a full boil. Once the sugar has dissolved, remove the saucepan from the heat and set the syrup aside to cool.

Meanwhile, peel the white peaches, remove the pits, and cut them into slices. Transfer the peach slices into a blender or food processor and blend until smooth, forming a puree. Pour the peach puree into a shallow, wide container (this helps with freezing), and then pour in the cooled syrup.

Mix the peach puree and syrup thoroughly, ensuring they are well combined. Place the mixture in the freezer and allow it to freeze.

After about 30 minutes, remove the mixture from the freezer and use a fork to scrape and break up the ice crystals that have formed. Return the granita to the freezer, and every 30 minutes thereafter, stir with a fork to break up the ice, repeating this process a total of four times. This will give the granita its signature fluffy, icy texture.

Once the granita has reached the desired consistency, scoop it into champagne flutes or serving glasses. For a decorative touch, garnish with fresh mint leaves and slices of peach. Serve immediately, and enjoy this refreshing Bellini-inspired granita as a delightful treat to cool off with!
