In a large mixing bowl, combine the flour, sugar, butter, baking powder, lemon zest, salt, and eggs.

Using a mixer on low speed, beat the ingredients until well mixed, ensuring to scrape down the sides of the bowl with a spatula.

Increase the mixer speed to high and beat the batter for 4 minutes, stopping occasionally to scrape down the bowl to ensure everything is thoroughly combined.
