Peach-Filled Coffee Cake Recipe

Ingredients:

  • 1 1/2 – 1 3/4 cups all-purpose flour
  • 1 cup sugar
  • 1 cup butter
  • 2 teaspoons baking powder
  • 2 teaspoons lemon zest
  • 1/8 teaspoon salt
  • 4 eggs
  • 4 ripe peaches, sliced (or canned pears as a substitute)

Topping:

  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 1 tablespoon grated lemon peel
  • 1/2 cup sugar

Instructions:

  1. Begin by preheating your oven to 350°F (175°C) and greasing a 13″x9″ baking pan.

  2. In a large mixing bowl, combine the flour, sugar, butter, baking powder, lemon zest, salt, and eggs.

  3. Using a mixer on low speed, beat the ingredients until well mixed, ensuring to scrape down the sides of the bowl with a spatula.

  4. Increase the mixer speed to high and beat the batter for 4 minutes, stopping occasionally to scrape down the bowl to ensure everything is thoroughly combined.

  5. Spread the batter evenly into the prepared baking pan.

  6. Arrange the sliced peaches (or canned pears, if using as a substitute) in rows on top of the batter.

  7. To prepare the topping, melt 1/2 cup of butter in a small saucepan over medium heat. Once melted, remove from heat and stir in the flour, grated lemon peel, and sugar until a soft dough forms.

  8. Sprinkle the entire top of the coffee cake batter and peaches evenly with the prepared topping mixture.

  9. Bake in the preheated oven for 45 to 50 minutes, or until the top is light golden brown and a toothpick inserted into the center comes out clean.

  10. Once baked, remove from the oven and allow to cool slightly.

  11. Cut the coffee cake into rectangles and serve warm.
