Instructions:

  1. Prepare the Ingredients:
    Begin by chopping all the ingredients for your pasta salad. Start by dicing the feta cheese into approximately half-centimeter cubes. Next, slice the cherry tomatoes lengthwise into wedges. Trim the radishes, removing both the ends and any leaves, and set them aside. Peel and pit the peaches, then cut them into small wedges. Finally, chop the wedges into small cubes to create a coarse tartare-like texture.

  2. Make the Vinaigrette:
    In a small bowl, combine the extra virgin olive oil and balsamic vinegar. Add a small spoonful of mustard to bring an extra layer of flavor to the dressing. Whisk them together until the dressing is smooth and well combined.

  3. Mix the Salad:
    In a large mixing bowl, add the sliced cherry tomatoes, radishes, feta cubes, and sliced black olives. Gently toss the ingredients together, ensuring they are evenly distributed. Drizzle the vinaigrette over the salad and mix everything together. Season with salt to taste.
