Peach Yogurt Gelatin Parfaits

Peach and Yogurt Gelatin

Ingredients:

Yellow peaches 1 kg
Sugar 30 g
Water 20 ml
Lemon zest ½
Gelatin sheets 10 g
Greek yogurt 4 tbsp
Powdered sugar to taste

Instructions:

  1. Prepare the peaches: Start by blanching 800 g of yellow peaches in boiling water for about 3 minutes. The remaining peach will be used for garnish later. After blanching, drain the peaches and let them cool slightly. Peel the skins off and chop the peaches into small pieces.

  2. Cook the peach mixture: Place the chopped peaches into a saucepan and add the sugar and water. Set the pan over medium heat and cook for approximately 20 minutes, stirring occasionally. During this time, the peaches will soften and release their juices.

  3. Remove the lemon zest: Once the peaches have cooked down into a thick puree, remove the lemon zest using a pair of kitchen tongs or a spoon.

  4. Prepare the gelatin: While the peaches are cooking, soften the gelatin sheets by soaking them in cold water for about 10 minutes. Afterward, squeeze out the excess water from the gelatin sheets.

  5. Combine gelatin and peach puree: Once the gelatin has softened, add the sheets to the warm peach mixture. Stir well until the gelatin is completely dissolved into the puree.

  6. Mold the gelatin: Pour the peach and gelatin mixture into four small molds, each about 7 cm in diameter. Allow the mixture to set in the refrigerator for at least 4-5 hours or until fully firmed.

  7. Unmold and garnish: Once the gelatin has set, gently run a knife around the edges of the molds to loosen the gelatin. Invert the molds onto small serving plates to release the peach gelatin.

  8. Prepare the garnish: Slice the remaining peach into thin, even slices. Arrange the peach slices around the gelatin for a beautiful garnish.

  9. Serve: Spoon a dollop of Greek yogurt onto each gelatin, then delicately place the peach slices around the yogurt. For a touch of sweetness, lightly dust the entire dessert with powdered sugar. Serve chilled for a refreshing, fruity dessert!
