- Tie together the cinnamon sticks, whole cloves, and slices of gingerroot in a spice bag.

Create Pickling Liquid:
- In a large stainless or enamel pot, combine the spice bag, sugar, and white vinegar.
- Cover the pot and bring the mixture to a boil. Once boiling, reduce the heat and let the pickling liquid simmer gently for 5 minutes.

- Carefully add the peach halves to the boiling pickling liquid.
- Allow the peaches to boil gently in the liquid for 8 minutes.

- Bring the pickling liquid and peaches to a full boil.
