Cooking Time: 15 minutes

Total Time: 30 minutes

Instructions:

  1. Boil the Peanuts:
Begin by preparing the boiled peanuts. Place the raw peanuts (moongphali) into a pressure cooker, adding 1 cup of water and a pinch of salt. Close the lid and cook for about 2 whistles on medium heat. After cooking, let the pressure release naturally. Once done, strain the peanuts and set them aside to cool completely.

  2. Boil the Potatoes:
In the same pressure cooker, add the potatoes and 1 cup of water. Pressure cook for 3 to 4 whistles. Once done, release the pressure naturally, peel the potatoes, and dice them into small cubes. Let the potatoes cool completely.

  3. Prepare the Bhel:
In a large mixing bowl, add the puffed rice. Next, add the finely chopped onion, tomato, and green chilli (if using). Then add the diced potatoes, along with the cooled boiled peanuts.

  4. Seasoning the Bhel:
Drizzle mustard oil over the mixture, and sprinkle in red chilli powder, chaat masala powder, and a pinch of black salt (or white salt to taste). Add lemon juice for a tangy kick and mix everything thoroughly.

  5. Final Touch:
Garnish with fresh coriander leaves and give the bhel one final mix to ensure the flavors are evenly distributed.

  6. Serve:
Serve the Sukha Bhel immediately in bowls, ensuring that the puffed rice remains crunchy. For an added touch, you can serve it alongside Spiced Chutney Sandwiches or a cup of Masala Chai for the perfect tea-time snack. This delightful chaat can also be packed for a quick snack during your working hours, offering a burst of flavors with every bite.

Tips for the Perfect Sukha Bhel:

  • If you prefer a spicy kick, you can increase the quantity of green chillies or add a dash of tamarind chutney.
  • Adjust the seasoning to your taste. If you like it more tangy, add a little more lemon juice.
  • You can also sprinkle some sev (crispy gram flour noodles) on top for extra crunch, just before serving.
  • For those looking for a healthier version, you can reduce the amount of mustard oil or substitute it with a lighter oil.

Enjoy the crispy, crunchy, and flavorful Sukha Bhel with the warmth of a cup of chai or as an exciting appetizer at your next gathering! This Peanut Bhel Chaat is sure to delight your taste buds and keep you coming back for more.
