Verusenaga Sambar Recipe

Ingredients:
- 2 cups peanuts, roasted and peeled
- 1-1/2 tsp cumin seeds
- 1 onion, chopped
- 1 tbsp sambar powder
- 2 tbsp tamarind paste
- 4 sprigs coriander leaves, finely chopped
- 1 tomato, chopped
For Tempering:
- 1 sprig curry leaves
- 2 tbsp oil
- 2 dried red chillies
- 1 tsp mustard seeds

Cooking Time: 30 mins
Instructions:
- In a pressure cooker, add the peanuts and enough water to cover them. Close the lid and cook for 2 whistles. Once done, discard any remaining water and set the peanuts aside.
- Heat oil in a pan. Add chopped onions and cook until soft. Once soft, remove the onions from the pan and set them aside.
- In the same pan, combine the half-boiled peanuts, cumin seeds, tamarind paste, cooked onions, coriander leaves, and sambar powder. Blend all ingredients into a smooth paste using a mixer grinder.
- Transfer the paste to the cooker with the remaining peanuts. Add salt, chopped tomatoes, and 1 cup of water. Cook the mixture for 3 to 4 minutes.
- For the tempering, heat oil in a small pan. Add mustard seeds and let them crackle. Then, add dried red chillies and curry leaves, cooking for an additional 10 seconds.
- Pour the tempering over the sambar and mix well.
- Serve the Verusenaga Sambar with rice, Chow Chow Thoran, and Papad for a complete meal.
