Tahu Telor with Peanut Sauce
Ingredients:
- 2 eggs
- 3 pieces of firm tofu, diced
- 1 stalk green onion, finely sliced
- 1 cucumber, diced
- Bean sprouts, soaked in hot water
- Cooking oil, as needed
- Salt, to taste
For the Peanut Sauce:
- 100 grams roasted peanuts (or roasted walnuts for a different flavor)
- 5 red chili peppers, briefly fried
- 2 cloves garlic, briefly fried
- 1 tablespoon palm sugar
- Salt, to taste
- Water, as needed
For Garnishing:
- Fried shallots
- Sweet soy sauce
Instructions:

Prepare the Tofu and Egg:
- In a bowl, beat the eggs with a pinch of salt and the finely sliced green onion. Gently fold in the diced tofu.
- Heat some cooking oil in a pan and pour in the egg mixture. Cook until the egg is set and lightly golden. Remove from heat and set aside.

Make the Peanut Sauce:
- In a blender, combine the roasted peanuts, fried chili peppers, fried garlic, palm sugar, and a splash of water. Blend until smooth.
- Transfer the mixture to a saucepan and bring to a simmer. Adjust the consistency with additional water as needed. Season with salt to taste and continue cooking until the sauce thickens slightly.

- Arrange the bean sprouts and diced cucumber on top of the fried tofu and egg mixture.
- Drizzle the warm peanut sauce over the top.
- Garnish with fried shallots and a drizzle of sweet soy sauce.
