Tahu Telor with Peanut Sauce

Ingredients:

  • 2 eggs
  • 3 pieces of firm tofu, diced
  • 1 stalk green onion, finely sliced
  • 1 cucumber, diced
  • Bean sprouts, soaked in hot water
  • Cooking oil, as needed
  • Salt, to taste

For the Peanut Sauce:

  • 100 grams roasted peanuts (or roasted walnuts for a different flavor)
  • 5 red chili peppers, briefly fried
  • 2 cloves garlic, briefly fried
  • 1 tablespoon palm sugar
  • Salt, to taste
  • Water, as needed

For Garnishing:

  • Fried shallots
  • Sweet soy sauce

Instructions:

  1. Prepare the Tofu and Egg:

    • In a bowl, beat the eggs with a pinch of salt and the finely sliced green onion. Gently fold in the diced tofu.
    • Heat some cooking oil in a pan and pour in the egg mixture. Cook until the egg is set and lightly golden. Remove from heat and set aside.
  2. Make the Peanut Sauce:

    • In a blender, combine the roasted peanuts, fried chili peppers, fried garlic, palm sugar, and a splash of water. Blend until smooth.
    • Transfer the mixture to a saucepan and bring to a simmer. Adjust the consistency with additional water as needed. Season with salt to taste and continue cooking until the sauce thickens slightly.
  3. Assemble the Dish:

    • Arrange the bean sprouts and diced cucumber on top of the fried tofu and egg mixture.
    • Drizzle the warm peanut sauce over the top.
    • Garnish with fried shallots and a drizzle of sweet soy sauce.
  4. Serve:

    • Enjoy the Tahu Telor with Peanut Sauce warm. It makes for a delightful, savory dish with a crunchy texture and a rich, nutty flavor from the sauce.
