Pasta with Fresh Tuna and Pesto

Ingredients:

Fresh Basil 25g
Sliced Almonds 40g
Garlic 1 clove
Pecorino Romano (Grated) 30g
Extra Virgin Olive Oil 80g + q.b.
Whole Grain Penne Rigate 320g
Fresh Tuna Fillets 250g
Lemon Zest (from untreated lemon) To taste
Dried Chili Pepper 1
Fine Salt To taste

Instructions:

  1. Prepare the Pasta:
    Start by bringing a large pot of water to a boil and add a pinch of salt for seasoning. Once the water is boiling, add the whole grain penne rigate and cook according to the package instructions until al dente.

  2. Make the Pesto:
    While the pasta is cooking, prepare the pesto. Take the fresh basil leaves and remove them from the stems. In a food processor or using an immersion blender, combine the basil, sliced almonds, garlic, and grated Pecorino Romano. Add the extra virgin olive oil (80g) and blend until you achieve a smooth, creamy consistency. Set the pesto aside.

  3. Cook the Tuna:
    Cut the fresh tuna fillets into 2 cm cubes. In a large skillet, add a drizzle of extra virgin olive oil and heat over medium-low heat. Once the oil is hot, add the tuna cubes to the pan. Sear the tuna for a brief moment, just enough to sear the outside, making sure it remains rare inside. Stir occasionally to prevent overcooking. Once done, zest a lemon (preferably untreated) into the pan and sprinkle in the dried chili pepper for a hint of heat. Stir to combine, then remove from heat.

  4. Combine the Ingredients:
    With the pasta cooked and drained, reserving a little bit of pasta water, add a ladle of the reserved cooking water to the pesto in the skillet. Turn the heat back on and allow the pesto to gently heat through, creating a silky sauce. Using a slotted spoon, transfer the cooked pasta directly into the pan with the pesto sauce.

  5. Toss and Serve:
    Toss the pasta with the pesto until it is evenly coated. Gently fold in the seared tuna, making sure to mix it without breaking up the tuna cubes. Season with salt, to taste, and adjust the amount of chili and lemon zest for an extra flavor boost.

  6. Serve:
