Water (for icing) 200ml
Sugar (for icing) 100g

Instructions

Step 1: Preparing the Sponge Cake

Start by separating the egg whites and yolks. Whisk the egg whites until stiff peaks form. In a separate bowl, beat the egg yolks with sugar until light and fluffy. Gently combine the egg whites with the egg yolks, being careful not to deflate the mixture.

In a separate bowl, sift the flour and potato starch together. Gradually incorporate the flour mixture into the egg mixture. Fold it gently until well combined.

Preheat the oven to 180ยฐC (350ยฐF). Line a round baking pan with parchment paper and pour in the batter. Bake for about 30-35 minutes, or until the cake is golden brown and a skewer inserted comes out clean.

Allow the sponge cake to cool before removing it from the pan. Once cooled, transfer it to a cutting board.

Step 2: Cutting the Cake into Shape

Download a Peppa Pig template or draw one on paper. Place the template over the cooled sponge cake and carefully cut the shape of Peppa Pig’s face. Also, divide the ears into two layers and make sure to preserve the shape of the face for later decoration.

Step 3: Preparing the Custard Filling

For the custard, heat the milk in a saucepan with the vanilla bean. Once the milk is hot, remove the vanilla bean and discard it. In a separate bowl, whisk together the egg yolks and sugar until smooth. Add the flour and whisk again to combine.

Gradually pour the warm milk into the egg mixture, stirring constantly. Return the mixture to the heat and cook over low heat, stirring frequently, until it thickens to a custard-like consistency. Let the custard cool before using it to fill the cake layers.

Step 4: Assembling the Cake

Take the first layer of sponge cake and moisten it lightly with a simple syrup or soaking solution. Spread a layer of the cooled custard over the cake. Place the second sponge cake layer on top.

Spread a thin layer of apricot jam over the top layer of cake to help the fondant adhere properly.

Step 5: Preparing the Fondant Decorations

Roll out the pink fondant using a rolling pin, and carefully drape it over the cake. Gently smooth out the fondant, ensuring that it fits the contours of Peppa Pig’s face. Trim any excess fondant from the edges.

For Peppa Pigโ€™s eyes, take a small piece of white fondant and roll it out with a rolling pin. Use a round cutter to create two circles. For the inner part of the eyes, use a smaller cutter to form black circles. You can add some pink for the cheeks by coloring a small piece of fondant and forming a small disc with a cutter.

Create Peppa’s mouth and nose using a small piece of red fondant for the mouth and a little bit of black for the nostrils. Assemble the face by carefully placing the eyes, nose, and mouth on the cake, ensuring they are positioned according to the Peppa Pig template.

Step 6: Final Touches with Royal Icing

Prepare royal icing by mixing egg white and powdered sugar until stiff peaks form. Add food coloring to achieve a darker pink color for detailing. Transfer the royal icing into a piping bag and use it to pipe the outline around Peppa Pigโ€™s features, such as the nose and mouth.

For extra details, you can also pipe some texture on the ears and face using the royal icing. Once youโ€™re satisfied with the detailing, set the cake aside to let the icing set.

Step 7: Decorating the Ears

For the ears, you can fill them with custard or apricot jam, and then cover them with the pink fondant. Smooth the fondant around the edges to create a seamless look. Attach the ears to the head of Peppa Pig on top of the cake.

Step 8: Let the Cake Set

Allow the cake to sit for a few hours so that the fondant sets and hardens. Once ready, serve your Peppa Pig cake to friends and family and enjoy the sweet flavors and adorable design!
