Button mushrooms 400 grams (sliced)
Green chili 2 (finely chopped)
Bell pepper (green or red) 1 (finely chopped)
Fresh ginger 1-inch piece (grated)
Black pepper powder 1/2 teaspoon
Turmeric powder 1/2 teaspoon
Garam masala powder 1/2 teaspoon
Salt To taste
Whole black pepper 1 tablespoon (crushed)
Fresh coriander leaves A few sprigs (chopped)
Oil As needed

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Total Time: 35 minutes

Servings: 2-3

Instructions:

  1. Prepare the mushrooms: Start by washing the button mushrooms thoroughly and slicing them into even pieces. Set them aside.

  2. Heat oil: In a large frying pan or wok, heat some oil over medium heat.

  3. Sauté the aromatics: Add the grated ginger and finely chopped green chilies to the hot oil. Sauté for about 1 minute until fragrant.

  4. Add bell peppers: Next, add the chopped bell pepper (green or red) to the pan. Cook for another minute, allowing the peppers to soften slightly.

  5. Cook the mushrooms: Now, add the sliced mushrooms to the pan. Stir well and cook for 5-6 minutes, allowing the mushrooms to release their moisture and soften.

  6. Spices and seasoning: Once the mushrooms are tender, add turmeric powder, black pepper powder, garam masala powder, and salt to taste. Stir everything together and cook for another minute to allow the spices to blend.

  7. Finish with black pepper: Add the crushed whole black pepper for an extra punch of flavor, then give it one final stir.

  8. Garnish and serve: Turn off the heat and garnish with freshly chopped coriander leaves.

Serve this delicious Pepper Mushroom Stir Fry hot, paired with Punjabi Rajma Masala and Tawa Paratha for a satisfying lunch or dinner. It also works wonderfully as a side dish for your regular meal.
