This delightful side dish was born out of necessity one evening, accompanying some succulent grilled steaks. Since then, it has become a frequent star on our table whenever a quick, flavorful vegetable is called for. Bursting with the freshness of peas, the earthiness of mushrooms, and the subtle sweetness of onions, this dish is a delightful addition to any meal. Plus, it’s heart-healthy and low in cholesterol, making it a guilt-free indulgence.

Ingredients:

  • 1 cup frozen baby peas
  • 1 cup button mushrooms
  • 1/2 onion, finely chopped
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon butter
  • Sea salt, to taste
  • Fresh cracked pepper, to taste

Instructions:

Step Description
1 Heat a skillet over medium-high heat.
2 Add 1 tablespoon of olive oil and 1 tablespoon of butter to the skillet, followed by the chopped onions and mushrooms. Sauté them for 3 to 5 minutes, until they start to soften and become fragrant.
3 Stir in the defrosted peas, ensuring they are well combined with the mushrooms and onions.
4 Drizzle the remaining olive oil over the peas and mushrooms, and season generously with sea salt and fresh cracked pepper. Give everything a good stir to evenly distribute the seasonings.
5 Reduce the heat to medium and continue cooking, stirring occasionally, until the dish is heated through and the flavors have melded together, about 5 minutes.
6 Once heated thoroughly, remove from heat and serve immediately alongside your favorite main dish. Enjoy!
