Homemade Beef Meatballs (Bakso Sapi)

Ingredients:

  • 600 grams ground beef
  • 6 tablespoons tapioca flour
  • 1 tablespoon beef flavoring (Royco or similar)
  • 1 teaspoon seasoning (optional)
  • Salt, to taste
  • 1 teaspoon black pepper
  • A pinch of baking powder
  • A few ice cubes
  • 10 cloves garlic, minced
  • Fried shallots (for garnish)

Instructions:

  1. Prepare Ingredients:

    • Begin by finely grinding the black pepper and minced garlic. Set aside.
  2. Mix Ingredients:

    • In a large mixing bowl, combine the ground beef with tapioca flour, salt, beef flavoring, seasoning (if using), minced garlic, and a pinch of baking powder. Add a few ice cubes to the mixture to keep the meat cold and to help with the texture.
  3. Knead the Mixture:

    • Mix the ingredients thoroughly until the mixture becomes smooth and elastic. This should take about 5 to 10 minutes of kneading.
  4. Chill the Mixture:

    • Transfer the meat mixture to the freezer and let it chill for about 1 hour. This step makes the meat easier to shape into balls.
  5. Shape the Meatballs:

    • Once the mixture is firm, remove it from the freezer. Using a small spoon or melon baller, shape the mixture into small meatballs.
  6. Cook the Meatballs:

    • Bring a pot of water to a boil, then reduce the heat to a simmer. Gently drop the meatballs into the simmering water. Cook until the meatballs float to the surface and are fully cooked through, which should take about 10 to 15 minutes.
  7. Prepare the Broth:

    • Do not discard the water used to cook the meatballs; it can be used as a broth for serving.
  8. Serve:
