- 1 cup Yellow Moong Dal (Split), or any other dal of choice
- 2 cups Water (or as needed)

Instructions:
- Begin by thoroughly washing the lentils under running water. Make sure they are completely drained before moving to the next step.
- Add the washed lentils to the pressure cooker. Pour in enough water to ensure the lentils are submerged with at least 2 inches of water above them.
- Secure the pressure cooker lid and place the weight on top. Cook the lentils over medium heat until you hear two whistles.
- Once the second whistle sounds, reduce the heat to low and allow the lentils to simmer for 3 to 4 minutes. Then, turn off the heat.
- Wait for the pressure to naturally release. This can take up to 10 minutes. Do not rush this step! You will know the pressure has released when the weight can be easily lifted and there is no hissing sound.
- Once the pressure is completely released, carefully open the cooker. Check the lentils by gently pressing them with the back of a spoon or your fingers. They should be soft and easily disintegrate.
- Your cooked lentils are now ready! Use them in dals, sambars, or other delicious lentil curries such as masoor gassi, black-eyed peas stew, or horsegram and coconut curry.
