Instructions

  1. Prepare the Tomatoes
    Begin by cutting each tomato in half crosswise. Place them on a tray and season the cut side with a pinch of salt and pepper to bring out their natural flavors.

  2. Prepare the Garlic Oil
    Peel the garlic cloves, then crush them to release their flavors. Heat the extra virgin olive oil in a small frying pan over medium heat. Add the garlic and let it cook gently until it just begins to turn golden brown, about 1 to 2 minutes. Be careful not to let it burn, as burnt garlic will introduce a bitter taste. Once golden, carefully pour the garlic and oil into a heatproof bowl, setting it aside.

  3. Preheat the Grill
    Set up your grill for high heat, making sure it’s properly preheated. When the grill is hot, use a brush to lightly oil the grate, helping to prevent the tomatoes from sticking.

  4. Grill the Tomatoes
    Place the tomatoes cut side down on the hot grate. Grill them for about 3 to 5 minutes, just enough for them to get nicely browned on the surface. For that perfect grilled presentation, rotate the tomatoes 45 degrees after about 2 minutes to achieve crosshatch marks.

  5. Flip and Season the Tomatoes
    Using tongs, carefully turn each tomato so the cut side faces up. Spoon the garlic and oil mixture into each tomato half, letting the warm oil seep into the flesh for rich garlic flavor.

  6. Finish Grilling
    Continue grilling the tomatoes, now with the cut side facing up, for another 3 to 5 minutes until the bottoms are browned and the tomatoes are soft but still hold their shape.

  7. Add Cheese and Thyme
    Carefully transfer the tomatoes to a serving plate. While they’re still hot, grate the Parmigiano-Reggiano cheese over the top, allowing it to melt slightly onto the warm tomatoes. Finish by sprinkling fresh thyme leaves for a hint of herbaceous brightness.

  8. Serve
