Ingredients:
- 4 pieces of chicken (cut into portions)
- 1/2 lemon
- Salt, to taste
For the Marinade:
- 1/4 onion
- 3 shallots
- 2 cloves of garlic
- 3 red chili peppers (small)
- 4 large red chili peppers
- Salt, to taste
- 3 tablespoons sweet soy sauce (e.g., Bango)
- 3 tablespoons broth or plain water
- Canola oil/olive oil/your preferred cooking oil
Instructions:

Prepare the Chicken:
- Clean the chicken pieces thoroughly. Marinade them with lemon juice and a pinch of salt. Let it sit for 20 minutes. Set aside the desired amount of chicken for cooking.

Make the Spice Paste:
- While the chicken is marinating, prepare the spice paste. Blend or grind together the onion, shallots, garlic, small red chilies, and large red chilies until smooth.

- In a pot, bring water to a boil and partially cook the chicken pieces for about half-cooked. Remove from the pot and drain well.
