Instructions:

Step 1: Cook the Wild Rice

  1. Begin by cooking the wild rice. Rinse the rice under cold water to remove any excess starch.
  2. Add the rinsed rice and 2 cups of water to a pressure cooker. Cook for about 6 whistles or for at least 30 minutes on a low-medium flame.
  3. Once cooked, release the pressure, drain any excess water, and set the rice aside.

Step 2: Prepare the Peri Peri Tofu

  1. In a mixer or food processor, combine the chopped onion, garlic, paprika powder, dried oregano, black pepper powder, cinnamon powder, and salt. Grind them together to form a coarse mixture.
  2. Heat some sunflower oil in a large frying pan (or kadai). Add the cubed tofu and fry it until golden and crispy on all sides.
  3. Once the tofu is crispy, add the peri peri masala paste (the ground mixture from Step 1) and toss the tofu cubes in it. Cook for another 3-4 minutes, allowing the tofu to absorb the spices evenly.
  4. Remove the tofu from the pan and transfer it to a bowl. Set it aside.

Step 3: Stir-Fry the Vegetables and Rice

  1. In the same pan, add a little more oil if needed. Add the chopped garlic, ginger, and onions, sautéing them until the onions become translucent and fragrant.
  2. Add the chopped bell peppers (green, yellow, and red), and sauté them for 5-6 minutes, or until they soften but still retain a slight crunch.
  3. Stir in the grated ginger and green chilies. Cook for an additional minute.
  4. Add the cooked wild rice to the pan. Stir to combine the rice with the vegetables and spices.
  5. Season with soy sauce, green chili sauce, and salt to taste. Stir-fry everything together for 3-4 minutes, ensuring the rice is well-coated with the sauce and spices.

Step 4: Combine and Serve

  1. Once the rice and vegetables are well combined, transfer the stir-fried rice into a serving bowl.
  2. Top the rice with the peri peri tofu cubes.
  3. Serve immediately while hot, and enjoy your flavorful and vibrant meal!
