Peshawari Chole is a flavorful and spicy chickpea curry from Punjab. This dish is perfect for your everyday meals or for serving at family parties. It’s a high-protein vegetarian dish that combines chickpeas with aromatic spices to create a satisfying and tasty meal.

Ingredients:

  • 1 cup Kabuli Chana (chickpeas)
  • 1 Onion, finely chopped
  • 2 Tomatoes, finely chopped
  • 1 Green chili, finely chopped
  • 1-inch piece of Ginger, grated
  • 2 Garlic cloves, grated
  • Salt, to taste
  • 2 Black tea bags
  • 1-inch Cinnamon stick
  • 2 Cardamom pods
  • 1 ½ tsp Pomegranate powder (Anardana)
  • 1 tsp Coriander powder
  • 1 tsp Red chili powder
  • 1 tsp Garam Masala powder
  • ½ tbsp Lemon juice
  • Oil, as needed

Preparation Time: 10 minutes
Cooking Time: 40 minutes

Instructions:

  1. Start by washing the chickpeas and soaking them for 6-8 hours. Once soaked, drain the water and add them to a pressure cooker.
  2. To the cooker, add 3 cups of water, cardamom, cinnamon, salt, and mix well. Add the tea bags and close the cooker. Cook for 4-5 whistles, then reduce the heat and let it cook for another 15 minutes. Let the pressure release naturally.
  3. Meanwhile, heat oil in a pan and add the chopped onion. Sauté the onion until it softens.
  4. Add the chopped tomatoes, green chili, ginger, and garlic to the pan, and cook for 5 minutes.
  5. Add red chili powder, coriander powder, pomegranate powder, and garam masala to the pan. Stir well and cook until the tomatoes soften and the spices blend.
  6. Once the pressure from the cooker has been released, remove the tea bags. Set aside 1 cup of chickpea water for later.
  7. Transfer the chickpeas and whole spices from the cooker to the pan. Add salt and a little chickpea water. Stir well. Cover the pan and cook for another 10-15 minutes on low heat.
  8. Finally, add lemon juice and garnish with fresh coriander.
  9. Serve your Peshawari Chole with naan and boondi raita for a delicious meal.
