Overview:

This delightful Pineapple Upside-Down Bread Pudding is a twist on the classic dessert, marrying the tropical flavors of pineapple with the comforting appeal of bread pudding. It’s a perfect treat for any occasion, whether you’re hosting a potluck, celebrating Thanksgiving, or simply enjoying a cozy brunch with family and friends.

  • Preparation Time: 15 minutes
  • Cooking Time: 40 minutes
  • Total Time: 55 minutes
  • Servings: 9

Ingredients:

  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 can (8 ounces) pineapple tidbits, drained (reserve the juice)
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1 can (about 8 ounces) maraschino cherries
  • 1/2 cup pecans, chopped
  • 8 slices of bread, torn into pieces

Instructions:

  1. Prepare the Egg Mixture: In a large bowl, combine the eggs, 1/2 cup of sugar, and vanilla extract. Stir the mixture until well-combined and set aside.

  2. Prepare the Bread and Pineapple: Drain the pineapple tidbits, but be sure to reserve the juice. Add the reserved juice to the egg mixture. Then, add the torn bread pieces to the mixture, gently tossing to coat the bread in the liquid.

  3. Prepare the Skillet: Preheat your oven to 350Β°F (175Β°C). In a 9 or 10-inch cast iron skillet, melt the butter over medium-low heat. Remove 3 tablespoons of the melted butter and add it to the bread mixture.

  4. Arrange the Ingredients in the Skillet: Sprinkle the brown sugar over the remaining butter in the skillet. Next, arrange the maraschino cherries and chopped pecans over the brown sugar. Finally, layer the drained pineapple tidbits over the cherries and pecans.

  5. Combine and Bake: Pour the bread mixture over the fruit in the skillet, ensuring it’s evenly distributed. Place the skillet in the preheated oven and bake for 35 to 40 minutes, or until the bread pudding is set and lightly browned.

  6. Invert and Serve: Once the bread pudding is done baking, carefully place a platter or large cake plate over the skillet. Invert the skillet so that the pudding falls out onto the plate, revealing the beautiful pineapple upside-down topping. Spoon any remaining sauce from the skillet over the top of the pudding for extra flavor.
