Instructions:

  1. Prepare the Dough:

    • Gradually add the flour, beating on medium speed until a stiff dough forms.

    • Wrap the dough in plastic wrap and freeze until firm, approximately 15 minutes.

    • Add the egg yolk and 1 tablespoon of water to the pistachio mixture. Process until a smooth paste forms.
  4. Assemble the Cookies:

    • Remove the chilled dough from the freezer and unwrap it.
    • In a small bowl, beat together the egg and 1 teaspoon of water to create an egg wash. Brush the top of the dough with the egg wash.
