Pistachio and Nutella Semifreddo

Ingredients:

Pistachio paste 60g
Crushed pistachios 25g
Heavy cream 300g
Nutella 150g

Instructions:

  1. Prepare the Nutella center:
    To begin, take a silicone mold shaped like half spheres and fill it with Nutella using a spoon. Use a spatula to smooth and level the surface of the Nutella. Once the mold is evenly filled, cover it with plastic wrap and place it in the freezer for at least 2 hours. This will form six Nutella half-spheres, each weighing about 25 grams.

  2. Prepare the semifreddo base:
    After 1.5 hours, start preparing the semifreddo. In a thick-bottomed saucepan, combine the sugar and water. Heat the mixture until it reaches 121°C, stirring occasionally. Once the syrup reaches the correct temperature, carefully pour it into a stand mixer (while it’s running), drizzling it in slowly. Continue mixing until the mixture cools completely.

  3. Whip the cream:
    While the sugar syrup is cooling, whip the heavy cream to soft peaks in a separate bowl.

  4. Combine the ingredients:
    Once the sugar syrup has cooled, gently fold in the whipped cream into the egg mixture using a whisk, being careful not to deflate the whipped cream. Gradually add the pistachio paste to the mixture, stirring to combine.

  5. Add crushed pistachios:
    Finally, add the crushed pistachios, mixing them into the semifreddo base to create a textured base.

  6. Assemble the semifreddo:
    Take the frozen Nutella half-spheres from the mold and place one in the center of each individual mold that will hold the semifreddo. Carefully pour the pistachio semifreddo mixture over the Nutella, filling the mold completely.

  7. Freeze and serve:
    Place the semifreddo molds back in the freezer and freeze until firm. Before serving, remove the molds from the freezer about 10 minutes beforehand to allow the semifreddo to soften slightly for easy unmolding. Once ready, invert the molds onto a serving platter and serve as is, or decorate with additional Nutella if desired.
